Born in the wood-paneled wonderland of Bar Raval in Toronto (allegedly), it’s as simple as it gets: cava and Spanish vermut, mixed in whatever ratio you fancy. Garnish with an olive, a citrus peel, or whatever you’ve got lying around—this drink refuses to be fussy.

Ingredients:
3-4oz cava (or whatever sparkling wine)
2oz Spanish vermut
1 orange twist, for garnish
Directions:
Add cava to a glass full of ice (typically wine glass or coupe glass)
Float the vermut on top and gently stir
Garnish with orange twist
